Rolled pork loin with figs

Roll cut the pork loin and put a pinch of salt and pepper

Lay a few layers of ham cut very thin

Slice the figs with their own skins and lay them on top of the ham

Roll the pork loin and its stuffing and tie it with a meat string or place it in a net bag

Sauté for a few minutes in EVO oil the onion and the diced celery and carrot

Add to the pan the rolled pork loin and cook it over a high heat turning it over all sides

Add the two ladles of vegetable broth and keep cooking for other 20 minutes

Then wrap the rolled pork loin in tinfoil and let it rest for about 15 minutes

In the meantime blend the vegetables and plate them next to the slices of pork

Serve hot
