Sauvignon blanc, Viognier, Chardonnay: White Wine Elleboro IGT Toscana

A peculiar blend that allowed the birth of Elleboro, the white wine produced by Podere Conca

Sauvignon blanc is a white berry vine variety, one of the most used in the world. It exists in France, Italy, the United States, Australia and in many other world countries, even if probably it originated in the Bordeaux area or the Loire in France. Its name comes from the adjective sauvage, meaning savage, just referring to its origin

Sauvignon blanc grapes can adapt to different weather conditions and create different final flavours.
Elleboro is the white wine of Podere Conca, Tuscan wine company located in the Livornese countryside.

The soil of Podere Conca is a privileged location: indeed, its terroir is located between Bolgheri and Castagneto Carducci and takes advantage from being close to Maremma coast, from where comes soft breezes, whilst the hills behind it protect from cold winds.

The choice of Sauvignon blanc for the blend of Elleboro is due to Silvia Cirri, who decided, after having studied at and attended the courses of Associazione Italiana Sommelier, to start the production of wine at Podere Conca, the family’s farm, involving her friend Livio Aloisi and her nephew Giovanni Gastel Jr.

Elleboro Blend and the Role of Sauvignon Blanc

Podere Conca was already surrounded by century-old olive trees, which offered an excellent extra virgin olive oil , but there were no vineyards, leaving the choice for the selection of the grapes aimed at reaching unique taste.

Silvia selected Sauvignon blanc Chardonnay and Viognier as grapes for Elleboro wine.

Elleboro ageing is made only in stainless steel and then in the bottle.

Organoleptic Notes

Sauvignon blanc provides a wine with features of freshness and deep aroma, with notes of herbs if the wines are young, and citrus fruit and dried fruits if they are more aged.

But Elleboro, thanks to Chardonnay and Viognier, features a bouquet of summer yellow fruits, above all peach and apricot.

Its sapidity makes Elleboro the ideal wine for entrées, aperitifs, and fish dishes.
