Persimmon mousse with chocolate chips

INGREDIENTS

PER 4 PERSONE
  • 150 gr dry cookies
  • 50 gr butter
  • 2 ripe persimmons
  • juice of ½ lemon 
  • 100 gr Greek yogurt 
  • 1 tbs cane sugar 
  • Chocolate chips

Let’s prepare together the Persimmon mousse with chocolate chips

PREPARATION

Peel the persimmons. 

Blend their pulp with the cane sugar and the lemon juice, then mix it with the yogurt. 

Break the cookies, mix them with softened butter and cover the bottom of 4 dessert glass cups. 

Place the cups in the fridge for one hour. 

Right before serving add on top of the biscuits with the persimmon mousse and garnish with chocolate chips. 

SIMOʼS SECRET

For a lighter version of this recipe use fat-free Greek yogurt and use honey instead of butter. Do not use any sugar when making the mousse.
